Latkes (Potato Pancakes)

Ingredients:

  • 5 lbs of potatoes, grated
  • 3/4 of a cup of all purpose flour
  • 2 eggs
  • 1 teaspoon of salt
  • 1 small onion, grated
  • Oil for frying

Combine all ingredients. Set griddle to medium heat, or utilize a sauté pan. Use about 2 tablespoons of oil per pancake. Place dollop of batter in pan. Brown each side. Serve hot.

Traditionally these are served with apple sauce, or sour cream.

Rum Raisin Rice Pudding

Ingredients:

  • 1 cup of short grain white rice
  • 4 cups of nonfat milk
  • 4 sticks of cinnamon
  • 1 can of sweetened condensed milk
  • 1 vanilla bean, split, and scrapped
  • 3/4 of a cup of dark rum
  • 1 cup of golden raisins

Wash rice under cold water, until water is clear. Drain well. Put milk, and cinnamon sticks in a small sauce pan. Bring to a slow boil. Add rice, return to boil, reduce to simmer. Cook for 12-15 minutes, or until al dente (barely soft throughout), stirring occasionally. Add sweetened condensed milk, and vanilla bean. Continue to simmer, covered, over low heat for another 10-15 minutes, or until rice is tender, and sauce has the consistency of heavy cream. Chill in a bowl over an ice bath to stop from cooking.

Place rum, and raisins in a pot. Simmer over low heat, until raisins have plumped, and rum is almost gone. Set aside to cool. Once cooled, fold into chilled rice pudding. Place pudding in the fridge, allow to set. Serve cold, top with a dash of cinnamon.

Apple-Raisin Bread Pudding

  • 2 cups of whole milk
  • 1 cup of sugar
  • 4 large eggs
  • 3 tablespoons of unsalted butter, melted
  • 1/4 teaspoon of ground cinnamon
  • 1/8 teaspoon of salt
  • 7 slices of crustless white bread, cut into 3/4 inch cubes (about 3 1/2 cups)
  • 1 large granny smith apple, peeled, cored, cut into 1/2 inch cubes
  • 2/3 cup raisins
  • Additional ground cinnamon
  • Vanilla ice cream

Preheat oven to 350º. Butter 11″x7″ glass baking dish. Whisk first 6 ingredients in a large bowl to blend. Fold in bread, apple, raisins. Pour batter into prepared dish. Bake pudding for 30 minutes. Sprinkle with additional cinnamon. Bake pudding until top is golden, and center is set, about another 35 minutes.

Spoon pudding into bowls. Top with vanilla ice cream, and serve.

Cheese Flan (Flan de queso)

  • 14 oz of condensed milk
  • 8 oz of evaporated milk
  • 8 oz of cream cheese
  • 2 eggs
  • 1 cup of sugar
  • 1 spoon of butter
  • 1/2 to 1 teaspoon of vanilla extract

Mix half cup of sugar in a blender with the remainder of ingredients. Preheat oven to 400º. Caramelize half a cup of sugar, then empty into mold. Add the mix on top. Bake for 45-55 minutes. Remove from the oven, and allow to cool. Place serving dish on top, then flip over. Enjoy!

Chilian Empanada Dough

  • 2 cups of flour
  • 3/4 cup of milk
  • 2 tablespoons of shortening
  • 1 teaspoons of salt
  • 2 egg yolks
  • 2 teaspoons of vinegar

Bring milk to boil, add vinegar. Let cool, combine remaining ingredients. Kneed dough. Once combined, place dough in fridge, covered in plastic wrap for 30-45 minutes. Once cool the dough is very easy to work with. Cut off small amount, and roll. Then stuff with anything you’d like. Use water, or an egg wash to seal in all the yummy goodness. A pastry brush works well, to keep the hands fresh from glue that is dough.

  • seasoned ground beef
  • ground pork
  • pulled pork
  • pulled chicken
  • potatoes/vegetable mix (seasoned potatoes, and peas work well)

  • fruit cream cheese mixture

Once stuffed, you can freeze for later, or cook right away. Bake at 425 for 20 minutes or fry until golden brown.

Cream butter, and sugar. Add egg. Sift flour, and baking soda into mixture. Roll doug into small balls, and place on an uncreased cookie sheet.

Dip bottom of small juice glass in the additional sugar. Press into each cookie to flatten.

Bake for 6.5 minutes, or until cookies are slightly brown around the edges. Allow to cook for 1 minute, and remove immediately. Makes 50.

  • 6 egg yolks
  • 1 1/4 cups white sugar

  • 1/3 cup Sambuca (white)
  • 2 cups espresso

Directions:

  1. Combine eggs yolks, and sugar in the top of a double boiler, over boiling water. Reduce heat to low, and cook for about 10 minutes, sitting constantly. Remove from heat and whip yolks until thick and lemon colored.
  2. Add mascarpone to whipped yolks. Beat until combined. In a separate bowl, whip cream to stiff peaks. Gently fold into yolk mixture and set aside.
  3. Add Sambuca to the coffee and dip the lady fingers into this mixture. Line the bottom of shallow glass baking pan with lady fingers. Spoon half of the cream filling over the lady fingers. Repeat with another layer of dipped lady fingers and top with cream filling. Garnish with cinnamon or cocoa and chocolate curls. Refrigerate several hours or overnight.
