  • 1/2 of a cup of brown sugar (or sub, i.e. zero calorie brown sugar sweetener)
  • 1-1/2 tsp of cinnamon

Protein Icing Ingredients;

  • 1/2 cup of confectioner sugar (or conf sub)

Preheat oven to 325°F.

Mix swirl ingredients well. Set aside.

Combine dry ingredients for bread. Add in wet ingredients. Mix well. Spray bread pay with non stick spray. Pour 1/2 batter into bread pan. Add in half of the swirl ingredients. Add remaining batter, topping with balance of swirl ingredients. Swirl (no mix) from top. Note that batter will rise. Bake at 325°F for 55-65 mins (times vary with ovens). Use fork, or toothpick to confirm batter is baked.

While baking (about 45 mixtures in), combine icing ingredients. Top bread as desired once bake has cooked. If you like a dry icing, wait for bread to cool. If you like a bit runny, apply when bread is warm.

The worlds best French Toast

Seriously. This is the best French toast I’ve ever had – without a bunch of toppings!

Ingredients;

Toppings;

  • Butter
  • Real maple syrup from upstate New York, Vermont, or Canada skip the fake crap.
  • Berries, or candied nuts
  • Powdered sugar

Directions;

Combine ingredients nutmeg, salt, zest in large mixing bowl. Add in cream, sugar, extract, and eggs. Mixed together using an emulsion blender. Add in a few slices of bread at a time. Don’t rush this step. You want the bread to soak up the flavors. Flip slices in batter to completely coat, and have bread absorb as much as possible. After the bread has soaked for at least 10 minutes, heat up a skillet, frying pay, or griddle on medium heat. Add in 1 table spoon of butter. Once butter has melted, take one slice of bread from batter, allowing excess batter to drain from bread back into bowl. Do not squeeze it. Just get the slight access off. The bread should be like a sponge. Cook bread on medium heat for 3-4 minutes.

Note: if butter is burning, turn down the heat. It’s should be low, and slow. You want to be sure the inside of the bread is cooked.

While the first batch of bread is cooking, put remaining bread slices in batter as space allows.

Flip bread in pan, cooking the other side, adjusting head as needed. Cook for 5-7 minutes.

Repeating the steps noted above.

Once all bread is cooked, serve with REAL maple syrup, and butter – because you’ve gone this far. This breakfast isn’t a healthy one. Have at it. Enjoy an espresso while you’re at it!

Latkes (Potato Pancakes)

Ingredients:

  • 5 lbs of potatoes, grated
  • 3/4 of a cup of all purpose flour
  • 2 eggs
  • 1 teaspoon of salt
  • 1 small onion, grated
  • Oil for frying

Combine all ingredients. Set griddle to medium heat, or utilize a sauté pan. Use about 2 tablespoons of oil per pancake. Place dollop of batter in pan. Brown each side. Serve hot.

Traditionally these are served with apple sauce, or sour cream.

Old fashioned Pancakes, with a twist

  • 1 1/2 cups of all purpose flour
  • 3 1/2 teaspoons of baking powder
  • 1/4 teaspoon of salt
  • 1 tablespoon of white sugar
  • 1 1/4 cups of milk
  • 1 egg
  • 3 tablespoons of melted butter

The Twist – which can vary depending on what you have available, or what you’re craving! Below are some ideas to add on. Try one item, or multiple at once!

  • Sub 1/2 cup of the flour with protein powder. I love the chocolate, and the kids love the berry
  • Lemon zest (thanks uncle Thom), it adds a nice flavor, and lightens up the cakes
  • 1/2 cup of berries – mixed, strawberry, blueberry, raspberry, or whatever is fresh in your area
  • 1 banana, cut in two long ways, and then sliced
  • Chocolate syrup, or coco-powder
  • Strawberry syrup
  • Chocolate candy: from kisses, to M&M’s, to broken up candy bars. They are all great sugar bombs for the littles.
  • Skittles
  • Sprinkles
  • Spices: Pumpkin spice, Cinnamon
  • Extract: 1 1/2 teaspoon of vanilla, almond
  • Marshmallows

In a large mixing bowl, sift in the flour, baking powder, salt, and sugar. Then slowly add in the milk, egg, and melted butter. Mix until you have a smooth constancy.

Heat up pan, or griddle to medium/medium high. Lightly oil, or spray with your favorite nonstick spray. Pour batter, in small batches onto hot surface. Flip once bubbles appear. Brown on both sides, serve hot with maple syrupy, or agave.

Note: if adding in sprinkles, or smaller candy: don’t add into the batter, as they will just disappear, and turn the batter a different color. I prefer to drop on top, after pouring batter onto surface.

8 servings

Don’t have all the ingredients, have a mix, but want to jazz it up? Try sparkling water, or lemon lime soda in place of water. Then add in some the items listed as a twist!
